Spring time is the best season for this nutritious vegetable!
You’ll see that I truly do enjoy using Asparagus in my meals. Asparagus is in season in the spring and this soup is delicious as the nights are just a little chilly.
In California, the weather doesn’t get really COLD, but the nights can have a little nip in the air and on those days I really think that soup hits the spot. Asparagus is nutrient filled with lots of fiber, vitamins and folate – it’s very good for you!
This soup is very smooth and tasty, I hope you enjoy it as much as we do. Try it with our Brown Butter Irish Soda Bread Recipe!
Asparagus Soup
A simple 6 ingredient nutritious springtime soup recipe.
INGREDIENTS:
2 lbs asparagus (2 bunches), tough ends snapped off
1 tbsp unsalted butter
1 medium onion, chopped
6 cups reduced sodium chicken broth
3 tbsp sour cream
kosher salt and fresh pepper, to taste
DIRECTIONS:
Melt butter over low heat in a large pot. Add onion and sauté until soft, about 2-minutes.
Cut the asparagus in half and add to the pot along with chicken broth and black pepper, to taste. Bring to a boil, cover and cook low about 20 minutes or until asparagus is very tender.
Remove from heat, add sour cream and using your hand held blender, puree until smooth (or in two batches in a large blender).
Serves 4

I have to tell you my asparagus soup story!
I LOVE asparagus! So, when I was 7 or 8 years
old, my family lived in Tacoma, WA. on McKinley
Avenue, and back in that day, more than 5o yrs
ago, we had a little Mom & Pop grocery store
across the street from our house, we just called
“Fred & Sue’s” named after the owners, of course.
And Saturday afternoons, would be one time our
family would be together for a lunch.
Well, my Mom and Dad, assigned me the awesome
task of zipping across the street to Fred and Sue’s,
to buy some soup and a desert cookie!
Oh Boy, I thought, I get to choose!
I was so excited to do this and taking my responsibility
very seriously, as I scanned the shelves for the
single best soup I could find! This was going to
be the best lunch ever!
Chicken noodle, beef and vegetables, split pea,
clam chowder… but WAIT…there it was… all by itself…
It was the LAST can, too!
~*\\AWWWWW//*~ Cream of ASPARAGUS!
How lucky I was! It was a little dusty…no harm!
But I got it! I took my awesome can of soup and
a package of some coconut & chocolate cookies
with pink stripes… so proud of myself… that
I got that last can! I placed all on the counter and
gave Sue the money, and I think she even asked
me if I was sure that that’s what I wanted!
Oh YES! This was perfect! Just what I was looking for!
I was going to sharpen the family’s palates
and broaden their sense of taste with something
we had never had before! (Now, I think to myself,
I felt like that little rat in the movie Ratatouille!)
I was so excited! I raced back across
the street and gave my Mom the grocery bag
and waited for the accolades! But she just looked
at me with puzzlement! Okay. Not what I expected!
But when my Dad saw what I had brought home,
he .was. beside. himself! Totally ANNOYED that
I would bring home Cream of Asparagus soup!
“WHO THE HELL EATS CREAM OF ASPARAGUS!”
I can still hear him today!!
I was CRUSHED! I won’t even go into the cookies!
My “punishment”, so to speak, was eating the
Cream of Asparagus soup by myself, but much to
MY delight, even as a kid…I LIKED IT!! So, THANKS, DAD!
I may not have sharpened their palates, but to this day,
I can laugh about it and honestly say…I love Asparagus!
So I will definitely try your Asparagus Soup!
